Check the for more details about these options. I actually just got the graphic novel Endgame in the post today, and it's amazing. The artwork is gorgeous, and so sharp. I haven't fully read it yet, I'm currently reading some Captain Britain comics, but I had a read of the first few pages.
It collects the first few comic strips from DWM with the 8th Doctor, and the other three volumes collect the others. It's published by Panini, and, from what I've read, they have done the same level of quality and care in collecting the other strips from the other Doctors. There are 2 books for the Fourth Doctor, 1 for 5, 2 for 6, 2 for 7, 4 for 8, 1 for 9, 3 for 10, and 3 for Eleven. And these all collect strips from DWM (and the Incredible Hulk for 7). They are pretty good, and definitely worth a read.
Although, I can't actually find the ones I want to read, which is annoying. There is a long history to Doctor Who comics and a lot of it was covered in a series of documentaries in the Classic DVD range. The series, called 'Stripped for Action', has been uploaded on to youtube, and covers the first eight Doctors. It's a great series, but the combined running time is a bit under 2.5 hours. So I'll give a much rougher history here. THE weekly/monthly strip.
1964-present: Original published by a company called Polystyre (though under different individual publications) the Doctor Who weekly comic strip began in October of 1964, less than a year after the show debuted. It was published as a two or three page serial, so each story would last several weeks, much like the TV series itself. Then in 1979 a man named Dez Skinn working for Marvel UK approached the BBC licensing department about producing a magazine dedicated to Doctor Who, one which would feature a comic. The BBC went for it and the license for a Doctor Who comic went from Polystyre to Marvel and Doctor Who Magazine was born. Finally in 1995 Pannini comics Doctor Who Magazine along with the comic license and the rights to the Polystyre comics. The Polystre strips were reprinted in Doctor Who Classic Comics.
This magazine was published by Marvel and ran for 27 issues. It reprinted strips from all seven Doctors in color. This is as 'collected' as the Polystyre strips get, at least officially, several websites have made scans of various Polystre stories but I don't think any one website has everything.

The Doctor Who Magazine strips however, have been collected in lovely graphic novels, either in their original b&w or original color. Here's a quick break down by Doctor: 4th:Two volumes, 'The Iron Legion' & 'Dragon's Claw', collect all but one strip from his DWM run. That missing strip (called 'Time-slip') is collected in. 5: 'The Tides of Time', the sole volume contains the complete fifth Doctor strips. 6: Two volumes, 'Voyage' & 'The World Shappers', these are his complete strips. 7: Three volumes, 'A Cold Day in Hell', 'Nemesis of the Daleks', 'The Good Soldier', even with three volumes the seventh Doctor is still incomplete. It's expected there will be two more volumes with one likely to come out next spring ('The Good Soldier' was only released last month).
8: completely collected in four volumes, 'Endgame' & 'The Glorious Dead' both in b&w, and 'Oblivion' & 'The Flood' both in color. 9: complete in one volume 'The Cruel Sea' 10: Three volumes, 'The Betrothal of Sontar', 'The Widow's Curse', & 'The Crimson Hand' completes his collection. 11: also completely collected in four volumes, 'The Child of Time', 'The Chains of Olympus', 'Hunters of the Burning Stone', & 'The Blood of Azrael'. 12: hasn't been collected yet, the first volume will be release this fall and be called 'The Eye of Torment'. The current issue (released today) is 'Blood and Ice; part four'. Other magazines: Radio Times - in 1996 following the TV Movie the Radio Times had a weekly half page comic featuring the eighth Doctor. It ran for 42 weeks and has not been officially collected or reprinted, although scans of all the issues are on-line.
Doctor Who: Battles in Time - The only things I know about this are; it ran for 44 issues, publishing 15 stories, that all featured the tenth Doctor, and have not been collected. Doctor Who Adventures Magazine - From April 2006 to March 2015 published by Immediate Media Compnay, and was aimed at a younger audience. Think spiritual successor to the early Polystyre strips, as time went on the page count and writing level dropped. Last moth it was relaunched, now published by Pannini. The comic is now 9 pages, and aimed at a more general audience.
Think spiritual continuation of the early Doctor Who Magazine. None of the strips have been collected. I'm sure there have been others, but they're probably one-offs or parodies, and haven't been collected. The Doctor Who Annual - was published by World Distributors from 1965-1986 I think. They contained short stories, articles sometimes related to the show, and sometimes a comic or two.
They haven't been collected, but some of the annuals were put on the Classic DVD range as pdf extras. In the early 90s DWM tried a similar publication called a 'Yearbook', again they featured the occasional comic, these haven't been collected, yet. In 2005 DWM published a World Distributors style annual, it featured the ninth Doctor and had a comic, this is in 'The Cruel Sea'. After that BBC Books and DWAM got the right to publish the annual (again comics from these are uncollected), so Pannini released a series of 'Storybook' with seven text stories and one comic, the comics have been collected in their relevant graphic novels. Finally Doctor Who comic books for the American market: Marvel, republished some of their early DWM strips back in the 80s. So collected elsewhere.
IDW - Had the license from 2008-2013. All the individual issues for the tenth Doctor have been rereleased digitally by Titan Comics as 'The Tenth Doctor Archives'. 'The Eleventh Doctor Archives' will be rereleased as paperback omnibuses over the coming months.
That said, there were two 'exclusive' issues that look like they won't be collected. Both feature 11, they are a SDCC exclusive, and an exclusive 50th Anniversary issue that was included in the complete Series 1-7 blu-ray set in the US. IDW still have the rights to their DW/Star Trek crossover 'Assimilation'. Titan - Current license holders. Publishing three ongoing ranges features 10, 11, & 12, each range features fifteen issues.
There is currently a five issue mini-series featuring 9, Rose, & Jack. August will see another five issue mini-series, this one will be released weekly, it's called 'Four Doctors'. In the fall the tenth and eleventh Doctor ranges will begin their second 'season', and there will be another five issue mini-series feature a past Doctor. There have been huge numbers of comics over the years, and the quality has varied tremendously, as you'd expect. Currently, there are the Titan ones - with The Tenth, Eleventh and Twelfth doctors in there own ongoing comics plus a miniseries with Nine. And there is also the ongoing scrip in DWM featuring Twelve.
The Titan ones have varied, with a recent arc for Ten, featuring the Angels bring very good indeed, but Eleven having the most consistently interesting run so far. The Ninth Doctor mini is looking interesting, and there will shortly be a multi-touch event also featuring the War Doctor.
